White Wine Lemon Butter Pasta

Y’all.  I can’t stop eating this sauce.  I legit put it on everything now.  Took this recipe from a friend and modified it slightly.  Can really use it on anything- zoodles, noodles, rice, etc.

White Wine Lemon Butter Pasta

Ingredients:

  • 8 oz whole wheat spaghetti (can sub for any pasta or zoodles here)
  • 2 Tbsp butter
  • 3 cloves garlic, minced
  • 1 bunch asparagus, chopped (can sub for any veggie)
  • 1 cup white wine
  • 1 lemon, juiced
  • 2 cooked chicken breasts, shredded (I used rotisserie.  Could also use shrimp or completely omit.)
  • 1/3 cup Parmesan cheese
  • Salt and pepper, to taste
  • Red pepper flakes, to taste

Directions:

  1. Cook pasta according to package instructions
  2. In a skillet over medium heat, heat butter and add garlic and cook until it’s fragrant, about 2 minutes.
  3. Add in asparagus and cook until it starts to soften, about 3 minutes.
  4. Add in wine, lemon juice, and chicken and cook until sauce reduces/thickens, about 3 minutes.
  5. Top with Parmesan cheese, salt, pepper, and red pepper flakes.
