Almond Flour Cookie Bars

These Almond Flour Cookie Bars are high in protein and healthy fats, but cut the calories!  They’re naturally gluten-free as well.

 

Almond Flour Cookie Bars

Ingredients:

  • 2 cups almond flour
  • 1/4 cup + 2 Tbsp brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 3 Tbsp unsweetened applesauce
  • 3 Tbsp canola oil (or coconut oil)
  • 1/2 cup chocolate chips

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine almond flour, brown sugar,  baking soda, and salt in a medium-sized mixing bowl.
  3. Add in egg, applesauce, and oil.  Mix well.
  4. Fold in chocolate chips.
  5. Pour dough into a greased 6×6 baking dish
  6. Bake for 15-20 minutes until toothpick comes out clean.
