Y’all. I can’t stop eating this sauce. I legit put it on everything now. Took this recipe from a friend and modified it slightly. Can really use it on anything- zoodles, noodles, rice, etc.
White Wine Lemon Butter Pasta
Ingredients:
- 8 oz whole wheat spaghetti (can sub for any pasta or zoodles here)
- 2 Tbsp butter
- 3 cloves garlic, minced
- 1 bunch asparagus, chopped (can sub for any veggie)
- 1 cup white wine
- 1 lemon, juiced
- 2 cooked chicken breasts, shredded (I used rotisserie. Could also use shrimp or completely omit.)
- 1/3 cup Parmesan cheese
- Salt and pepper, to taste
- Red pepper flakes, to taste
Directions:
- Cook pasta according to package instructions
- In a skillet over medium heat, heat butter and add garlic and cook until it’s fragrant, about 2 minutes.
- Add in asparagus and cook until it starts to soften, about 3 minutes.
- Add in wine, lemon juice, and chicken and cook until sauce reduces/thickens, about 3 minutes.
- Top with Parmesan cheese, salt, pepper, and red pepper flakes.
