Shrimp Cobb Salad with Homemade Greek Yogurt Ranch Dressing

Hi, it’s me again, your resident registered dietitian who is completely OVER cooking right now. Like… cannot stand the thought of it. Anyone else? To avoid yet ANOTHER night of takeout, I threw together this easy and delicious Shrimp Cobb Salad last night. It involved more “throwing things into a bowl” than it did “cooking”, so thankfully I came out alive.

The best part? We fed it to Marek too. Legit fed the whole fam, and the whole fam was happy with it too! Win-win!

I used Gortonsseafood Beer Battered Shrimp as my protein. You guys know how obsessed I am with their Beer Battered Fish Sticks, and the shrimp did not disappoint. The best part (aside from the fact that they’re delicious, high in protein, rich in vitamins and minerals, and Marek loves them) is that they can go straight from the freezer to the oven.  I cooked the whole box for this recipe, but I love that I can also just cook a couple a shrimp for baby Marek’s meals/snacks.

Shrimp Cobb Salad with Homemade Greek Yogurt Ranch Dressing

Salad Ingredients (adjust portions to your taste):

    • 1 box Gorton’s Beer Battered Shrimp, cooked according to package directions
    • Romaine lettuce, chopped
    • Roma tomatoes, chopped
    • Avocado, chopped
    • White corn (canned and rinsed)
    • Goat cheese, crumbled
    • Hardboiled eggs, chopped

Homemade Greek Yogurt Ranch Dressing Ingredients: 

    • 2 tablespoons fresh dill
    • 2 teaspoons garlic powder
    • 1 teaspoon onion powder
    • 1/4 teaspoon ground black pepper
    • 1 teaspoon salt
    • 1 tablespoon fresh chives
    • cup plain greek yogurt
    • 1/3 cup buttermilk
    • 1 teaspoon Dijon mustard
    • 1 teaspoon lemon juice

Directions:

  1. Mix all dressing ingredients into a bowl.  Mix well.
  2. Place salad ingredients into one large bowl using your desired portions.  Mix with dressing and enjoy!
