Protein Pumpkin Muffins

Full of vitamin A, vitamin C, protein, and fiber, these muffins make a great snack or dessert!  These stack up at 100 calories, 3g protein, 16g carb, and 4g fiber per muffin! I hope you love them!

Protein Pumpkin Muffins

Ingredients:

  • 1/3 cup + 2 Tbsp coconut flour
  • 1 cup pumpkin puree
  • 2 ripe bananas
  • 1 Tbsp maple syrup (I used sugar-free)
  • 3 eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • pinch of salt
  • 1/2 cup chocolate chips (I used Lilys)

Directions:

  1. Preheat oven to 375.
  2. Combine all ingredients except chocolate chips in a high powered blender.  Blend until smooth.
  3. Stir in chocolate chips.
  4. Divide batter into muffin tins (either greased or filled with parchment paper).  This recipe made 12 muffins for me.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.

      I do! I’ll add them to the post, but if you make a dozen, it’s 100 calories, 3g protein, 16g carb, and 4g fiber per muffin! I hope you love them!
