Full of vitamin A, vitamin C, protein, and fiber, these muffins make a great snack or dessert! These stack up at 100 calories, 3g protein, 16g carb, and 4g fiber per muffin! I hope you love them!
Protein Pumpkin Muffins
Ingredients:
- 1/3 cup + 2 Tbsp coconut flour
- 1 cup pumpkin puree
- 2 ripe bananas
- 1 Tbsp maple syrup (I used sugar-free)
- 3 eggs
- 1 tsp baking soda
- 1 tsp cinnamon
- pinch of salt
- 1/2 cup chocolate chips (I used Lilys)
Directions:
- Preheat oven to 375.
- Combine all ingredients except chocolate chips in a high powered blender. Blend until smooth.
- Stir in chocolate chips.
- Divide batter into muffin tins (either greased or filled with parchment paper). This recipe made 12 muffins for me.
- Bake for 20-25 minutes or until a toothpick comes out clean.
