This Tortellini Salad is the perfect example of volumetrics eating. Instead of eating a huge bowl of tortellini, bulk it up by adding spinach or arugula, chicken, chickpeas, and tomatoes. Same volume, half the calories!
Tortellini Salad
Ingredients:
- 1/4 cup balsamic vinegar
- 1/8 tsp black pepper
- 3/4 tsp salt, divided
- 1/3 cup EVOO
- 2 Tbsp chopped fresh basil
- 2 (9 oz) packages of tortellini, cooked according to package directions and cooled (I used one cheese and one spinach package)
- 1 cup halved cherry tomatoes
- 1/2 cup drained and rinsed chickpeas
- 2 cups shredded rotisserie chicken
- 2 cups baby arugula or spinach
- 3 Tbsp chopped roasted almonds
Directions:
- whisk together vinegar, pepper, EVOO, and 1/2 tsp salt in a small bowl. Add in basil.
- Toss together the remaining ingredients.
- Gently fold the basil vinaigrette into the salad ingredients and enjoy cold!
