Healthy Flourless Brownies

Y’all.  These are flourless, dairy-free, and full of healthy fats and antioxidants.  Give ’em a try!

 

Healthy Flourless Brownies

Ingredients:

  • 3/4 C pumpkin puree
  • 1/2 cup nut butter (I used peanut butter, but any kind works)
  • 1 egg
  • 5 Tablespoons dark chocolate cocoa powder
  • 1 scoop vanilla or unflavored protein powder
  • 6 Tablespoons honey or maple syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips (I used semi-sweet)

Directions:

  1. Preheat oven to 375 F.
  2. Combine all ingredients except chocolate chips in a blender or food processor.  Blend until smooth (about 30 seconds).
  3. Using a spoon or spatula, fold in chocolate chips.
  4. Pour batter into a greased 8×8 inch pan.  Bake for 20-25 minutes, or until a toothpick comes out clean.
  5. Let cool before serving.
