Healthy Flourless Brownies
Ingredients:
- 3/4 C pumpkin puree
- 1/2 cup nut butter (I used peanut butter, but any kind works)
- 1 egg
- 5 Tablespoons dark chocolate cocoa powder
- 1 scoop vanilla or unflavored protein powder
- 6 Tablespoons honey or maple syrup
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 cup chocolate chips (I used semi-sweet)
Directions:
- Preheat oven to 375 F.
- Combine all ingredients except chocolate chips in a blender or food processor. Blend until smooth (about 30 seconds).
- Using a spoon or spatula, fold in chocolate chips.
- Pour batter into a greased 8×8 inch pan. Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let cool before serving.
