Sweet Potato Crust Quiche

I don’t know about you guyz, but I grew up on quiche.  Living in the south, quiche wasn’t just a meal, it was a religion.  Birthdays, showers, holidays…. all quiche everything.  It wasn’t until I graduated with a degree in nutritional sciences that I realized that quiche is NOT THAT GOOD FOR YOU.  Damn it.  I hated to see the demise of this wonderful food in my life just because of it’s insanely high fat and calorie content, so I had to act fast.  Cue my sweet potato crust quiche!

This skinny egg sandwich is my kind of lunch. The eggs, the hummus, the high fiber/protein bread (Dave’s Killer Bread is awesome), and some lettuce or tomatoes to top it off. Healthy, easy recipe that can easily be switched up by using a different flavor hummus.

Healthy Pizza Crust

Now I’ve tried my fair share of veggie pizza crusts (cauliflower pizza crust, broccoli pizza crust, etc) and I love them.  But let’s be real- they are a mess to make.  They are time consuming, they make a mess of my kitchen, and they’re not the easiest to eat.  This pizza crust is different.  It’s simple.  It’s high protein.  It’s easy cleanup.  And it’s GOOD.

Lean BBQ Pulled Pork

I scream, you scream, we all scream for BBQ!  That’s how it goes, right??  I LOVE BBQ, but often it’s made with fatty cuts of meat.  Well, in typical RD fashion, I’ve found a healthy and easy modified BBQ!  This is my take on a pulled pork… except lean!  And super easy!  Cue… the crock pot.
