Easy easy easy pancakes…did I mention they are easy? We have gotten to know the founders of Love Grown Oats in Denver and they gave us this idea when they let us sample some of their products. Their stuff is so good and this was almost too easy to make 🙂

So not only have I had to take the responsibility upon myself to learn how to cook good Mexican food, I have also had to find a way to make it healthy. And I did just that with this recipe.
