I LOVE to eat pumpkin. It’s loaded with fiber and healthy antioxidants. It also makes a great substitute for fat in recipes (hence how I was able to use hardly any added fats in this recipe). I don’t actually love decorating with pumpkins (I know, I’m weird), but everything about eating them, I adore. I think you’ll really love this Lightened-up Pumpkin Bread recipe!
Lightened-up Pumpkin Bread
Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1/2 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 1 15 oz can pumpkin puree
- 2 tbsp vegetable oil
- 2 large egg whites
- 1 1/2 tsp vanilla extract
- baking spray
Directions:

Preheat oven to 350°.

Spray a 9 x 5 inch loaf pan with baking spray.

In a medium bowl, combine flour, sugar, baking soda, pumpkin spice, nutmeg, cinnamon, and salt. Set aside.

In a large bowl, mix pumpkin puree, oil, egg whites, and vanilla. Mix at medium speed until thick.

Add flour mixture to pumpkin mixture and blend until combined. Do not over mix.

Pour batter into loaf pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
