Smoked Salmon Wrap

Wraps on wraps on wraps!!!  Simple and healthy lunch idea.  Of all meals, I think my clients struggle most with lunches.  They need to be something quick (no one wants to spend 30 min every morning prepping something), easy (we aren’t all professional chefs here, right?!), and healthy (duh, I’m a dietitian).  This wrap was made up of things I already had in the fridge, and it turned out awesome.

Shrimp Salad

This shrimp salad was so tasty and so easy to make!  Many times salads are lacking in something, whether it be protein, carbs, fats, or let‘s be honest- taste.  This salad isn’t lacking in any of the above!  Protein (think: shrimp), vitamin C (think: tomatoes, onions, avocado, pineapple), fiber (think: tomatoes, onions, avocado, pineapple), and monounsaturated fats (think: avocado), this salad has it all!

Curry Tuna Salad

I’ve been craving salads recently, probably because of the heat, so I made this one up and I’m pretty proud of it!  In my mind, tuna is the perfect food.  It’s crazy high in heart healthy omega 3s, it’s high in protein, and the best part is, it’s super cheap and easy to use when canned.  I recommend albacore as it’s a bit higher in omega 3s than the chunk white.  I call that a win-win!  Cheap, shelf stable, and healthy?!?!  Not many other foods that can say that…
