I don’t think I’ve made this obvious enough on my feed, so I figured I better post it again: I LOVE PEANUT BUTTER AND OATMEAL. There. That felt good to get off my chest. Again. Branched out from my first true love (Kroger brand natural peanut butter) to try this vanilla bean + espresso almond butter by Barney Butter. Yum is an understatement. Easy peasy and great for breakfast. Healthy fats, fiber, AND protein. Done and done.
I eat this every single day of the work week (I mix it up on weekends). I typically use steel cut oats, which break down slowly and give me a fiber punch in the morning, keeping me full for hours. I ran out today since I typically pre-prep them, so I used old fashioned oats for today’s PB+OM. I season it with vanilla extract and cinnamon to sweeten it without adding sugars. Plus, cinnamon is full of antioxidants and has been shown to help with blood sugar control. I topped it off with 2 Tbs almond butter to add protein and healthy monounsaturated fats. Fat, fiber, and protein are your most filling nutrients, and this meal packs them all! Finish with a little unsweetened almond milk, and you’ve got a quick, easy, filling breakfast.
