This shrimp salad was so tasty and so easy to make! Many times salads are lacking in something, whether it be protein, carbs, fats, or let‘s be honest- taste. This salad isn’t lacking in any of the above! Protein (think: shrimp), vitamin C (think: tomatoes, onions, avocado, pineapple), fiber (think: tomatoes, onions, avocado, pineapple), and monounsaturated fats (think: avocado), this salad has it all!
So why is shrimp the bomb?
- It’s low calorie.
- It’s high protein.
- It’s high in selenium.
- It’s high in B12.
- It’s high in cholesterol (and who cares?! Reseach shows that we should be much more concerned with saturated and trans fats than cholesterol).
Shrimp Salad
Ingredients:
- 1 pound jumbo shrimp, cooked, peeled, and chopped
- 1/4 cup chopped red onion
- 2 limes, juice of
- 1 medium tomato, diced
- 1 medium avocado, diced
- 1 jalapeño, diced
- 1/2 cup pineapple, diced
- Salt to taste
Directions:
1. In a small bowl, combine all ingredients and let marinate for 5 minutes.
