Craving donuts but missed National Donut Day. Attempted to make them myself only to realize I don’t have a donut pan. Solution: Disk-nuts. Actually so good and low fat! Baked, not fried, with only 1 Tbsp of fat for the whole recipe. Disclaimer: not low sugar ha! Everything in moderation, right?!
Healthy Donuts
Ingredients:
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1 teaspoon salt
- 3/4 cup milk
- 2 eggs
- 1 teaspoon vanilla
- 1 Tablespoon coconut oil
For glaze:
- 1 cup confectioners sugar
- 2 Tbsp hot water
- 1/2 tsp almond extract
Directions:
- Preheat oven to 325.
- In a large bowl, mix all donut ingredients together (not glaze ingredients).
- Roll dough into balls and place onto greased baking sheet.
- Bake 8-10 minutes.
- In a large bowl, blend ingredients to make glaze.
- Dip each donut in glaze once slightly cooled. Enjoy.
